Napa Cabbage and Fresh Herbs with a Peanut Dressing

Ingredients
- 1/2 cup rice wine vinegar
- 1 tbsp soy sauce
- 1 lime, juiced
- 2 tbsp sesame oil
- 1/2 cup creamy peanut butter
- 1/2 head Napa cabbage, sliced thin
- 3 inch piece of ginger, grated
- 1 red bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- 2 Thai chilies, minced
- 1 large carrots, graded fine
- 3 green onions, sliced on the diagonal
- 2 tbsp cilantro, minced fine
- 2 tbsp mint, minced fine
Directions
- In a small bowl mix the 1/2 cup rice wine vinegar, 1 tbsp soy sauce, the juice from the 1 lime, the 2 tbsp sesame oil, and the 1/2 cup of peanut butter. Whisk vigorously until an emulsion forms.
- After dicing the other ingredients into bite sized pieces as noted above, add to a large mixing bowl.
- Add the dressing to the mixing bowl and stir to combine.
